Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 red onion, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

  2. While the quinoa is cooking, dice the red onion and chop the fresh parsley.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper to create the dressing.
  4. Once the quinoa is done cooking, fluff it with a fork and transfer it to a large mixing bowl.
  5. Add the diced red onion and chopped parsley to the mixing bowl with the quinoa.
  6. Pour the dressing over the quinoa mixture and stir until everything is evenly coated.
  7. Enjoy immediately or store in the refrigerator for up to 3 days.

This salad makes a great lunch or side dish and can easily be customized to your liking. Try adding in some chopped veggies like bell peppers or cucumbers for extra crunch and flavor.
