Orange and Cashew Stir Fry Recipe: A High-Protein and Flavorful Dish

Not only is this dish packed with protein, thanks to the cashews and chicken, but it’s also loaded with vitamin C from the oranges. Plus, it’s a great way to get in some veggies, as the recipe includes broccoli and bell peppers.

Here’s what you’ll need:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head of broccoli, chopped into florets
  • 1 red bell pepper, sliced
  • 1 orange, peeled and segmented
  • 1/2 cup unsalted cashews
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste

First, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Add the broccoli and bell pepper to the same skillet and cook until tender, about 5 minutes. Add the garlic and cook for an additional minute.

In a small bowl, whisk together the soy sauce, honey, cornstarch, red pepper flakes, salt, and pepper. Pour the sauce over the veggies and stir to coat.

Add the chicken back to the skillet and stir to combine. Cook for an additional 2-3 minutes, until everything is heated through.

Finally, add the orange segments and cashews to the skillet and stir to combine. Cook for an additional minute or two, until the cashews are slightly toasted.

And that’s it! Serve your Orange and Cashew Stir Fry over rice or quinoa for a complete meal.
