Healthy and Nutritious Potato Salad Recipe

Summer is here and that means it’s time for outdoor picnics and BBQs. One of the most popular dishes at these gatherings is potato salad. However, traditional potato salad recipes are often loaded with unhealthy ingredients like mayonnaise and bacon. But fear not, because I have a healthy and nutritious potato salad recipe that will satisfy your taste buds without compromising your health.

Ingredients:

  • 2 lbs of organic potatoes
  • 1/2 cup of chopped red onion
  • 1/2 cup of chopped celery
  • 1/4 cup of chopped fresh parsley
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of dijon mustard
  • 1/4 cup of extra-virgin olive oil
  • Sea salt and black pepper to taste

Start by boiling the potatoes in a large pot of salted water until they are tender. Drain the potatoes and let them cool for a few minutes before cutting them into bite-sized pieces. In a large mixing bowl, combine the potatoes, red onion, celery, and parsley.

In a separate bowl, whisk together the apple cider vinegar, dijon mustard, and olive oil. Pour the dressing over the potato mixture and toss to coat. Season with sea salt and black pepper to taste.
