Why Blueberries and Quinoa?
Blueberries are a superfood that are packed with antioxidants, which help protect your body from damage caused by free radicals. They’re also high in vitamin C, vitamin K, and fiber. Quinoa, on the other hand, is a complete protein that’s also high in fiber, iron, and magnesium. Together, these two ingredients make for a perfectly balanced and nutritious salad.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 cup blueberries
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, bring the water and quinoa to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender.
- Remove from heat and let cool.
- In a large bowl, combine the quinoa, blueberries, cherry tomatoes, red onion, feta cheese, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Enjoy!
