Vegetarian Tofu and Spinach Lasagna Recipe

Are you a vegetarian looking for a delicious lasagna recipe that doesn’t involve meat? Look no further than this vegetarian tofu and spinach lasagna recipe!

Ingredients:

  • 1 package of lasagna noodles
  • 1 block of firm tofu, drained and crumbled
  • 1 bag of fresh spinach
  • 1 jar of your favorite marinara sauce
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. Cook the lasagna noodles according to the package instructions. Once they’re done, drain them and set them aside.
  3. While the noodles are cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the crumbled tofu to the skillet and sprinkle with garlic powder, salt, and pepper. Cook for about 5 minutes, or until the tofu is lightly browned.
  5. Add the bag of spinach to the skillet and cook until it’s wilted, stirring occasionally.
  6. Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
  7. Add a layer of cooked lasagna noodles on top of the sauce.
  8. Add a layer of the tofu and spinach mixture on top of the noodles.
  9. Sprinkle a layer of shredded mozzarella and grated Parmesan cheese on top of the tofu and spinach mixture.
  10. Repeat steps 6-9 until all of the ingredients are used up, ending with a layer of cheese on top.
  11. Cover the baking dish with foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  13. Let the lasagna cool for a few minutes before serving.
