Ingredients:
- 1 package of lasagna noodles
- 1 block of firm tofu, drained and crumbled
- 1 bag of fresh spinach
- 1 jar of your favorite marinara sauce
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F.
- Cook the lasagna noodles according to the package instructions. Once they’re done, drain them and set them aside.
- While the noodles are cooking, heat the olive oil in a large skillet over medium heat.
- Add the crumbled tofu to the skillet and sprinkle with garlic powder, salt, and pepper. Cook for about 5 minutes, or until the tofu is lightly browned.
- Add the bag of spinach to the skillet and cook until it’s wilted, stirring occasionally.
- Spread a thin layer of marinara sauce on the bottom of a 9×13 inch baking dish.
- Add a layer of cooked lasagna noodles on top of the sauce.
- Add a layer of the tofu and spinach mixture on top of the noodles.
- Sprinkle a layer of shredded mozzarella and grated Parmesan cheese on top of the tofu and spinach mixture.
- Repeat steps 6-9 until all of the ingredients are used up, ending with a layer of cheese on top.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the lasagna cool for a few minutes before serving.
