Ingredients:
- 1 block of firm tofu, drained and pressed
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup shredded carrots
- 1 cup edamame
- 1 avocado, sliced
- 2 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp ginger powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F.
- Cut the tofu into cubes and place on a baking sheet lined with parchment paper. Drizzle with sesame oil and season with salt and pepper. Bake for 25-30 minutes, flipping halfway through.
- In a medium saucepan, bring the quinoa and vegetable broth to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until all the liquid has been absorbed.
- In a small bowl, whisk together the sesame oil, soy sauce, honey, garlic powder, and ginger powder.
- Divide the quinoa among four bowls. Top with the baked tofu, bell peppers, shredded carrots, edamame, and avocado. Drizzle with the soy sauce mixture.
